One of the best parts of our job is being able to work with clients who would like to custom create menus for their event. We had a couple who wanted to incorporate her family’s Puerto Rican heritage into the menu for their event. One of her favorite foods is her mom’s amazing Pionono. This delicious dish is made in many different versions depending on location. The Puerto Rican version combines sweet plantain as the “bread” around a savory filling, in this case a meat filling called picadillo. The sweet plantains and ground beef is then topped with scrambled egg to hold the dish together. Our chefs tinkered with the original recipe in order to make an appetizer that maintained the delicious ingredients for the Pionono, but made it accessible and easy to eat as an appetizer. Turned out amazing, Yummmm!
