Morning: Fresh Starts and Final Details

Our day begins early in the kitchen. Chefs arrive before sunrise to begin prepping for the day’s events, which might include a waterfront wedding in Fell’s Point, a corporate luncheon downtown, or a gala in the Inner Harbor.  No two events are the same.

Fresh ingredients are always at the core of what we do. We source produce, seafood, and baked goods from local Maryland vendors whenever possible. As a family-owned business, supporting local farms and suppliers isn’t just good practice, it’s part of our commitment to the community.

While the kitchen team gets started, our event coordinators double-check timelines, confirm deliveries, and review final details with clients to make sure every aspect of service aligns with their vision.

Midday: Coordination in Motion

By mid-morning, the kitchen is in full swing. Proteins are roasted and carved, sauces are simmering, and desserts are plated with precision. Each dish is labeled, packed, and loaded with care by our logistics team, along with all the china, glassware, and linens needed for the event.

Attention to detail is key. Whether we’re catering a 400-guest wedding or an intimate celebration, every tray, tablecloth, and garnish has a purpose. Our service captains meet with their teams before departure to review timelines, floor plans, and responsibilities, ensuring the same level of professionalism our clients have come to expect.

Evening: Execution and Experience

When guests arrive, our team transitions seamlessly from preparation to execution. Service staff, bartenders, and chefs work together to create an effortless experience for the hosts and their guests.

While every event is different, our goal remains the same: to provide high-quality food, attentive service, and a smooth, well-organized event. Whether it’s a plated dinner, buffet, or interactive food station, our focus is always on consistency and presentation.

After the final course is served and the last guest departs, our crew begins the breakdown and cleanup process. Back at the kitchen, we review the day’s events, restock, and prepare for what’s next on the calendar.
